Compound Butter


Roasted Chicken Compound Butter

Jessica 8-4-13

  • 1 stick of softened butter
  • Ground black pepper
  • Ground roasted garlic
  • 2 heads of roasted garlic
  • Dried shallots
  • Dried minced green onion
  • Grated lemon rind
  • 2 tblsp of lemon juice
  • Dried thyme

     Roughly 1 to 1-1/2 tblsp of each spice to your liking. No salt as you can adjust that after the fact and you'll dry out the chicken. This is simply a flavor step and will enhance the gravy at the end. This will result in a garlic centric bird with herb highlights.
