Chicken Marinade G

Yields roughly two to three cups.
- 3 Lemons (zest and juice)
- 4 Garlic cloves, grated
- ¼ Cup chopped fresh marjoram
- 3 Tbsp dried oregano
- ½ Cup olive oil
- ¼ Cup capers plus caper water
- 2 Tbsp dry white vermouth
- 3 Tbsp ground black pepper
- ½ Cup white wine vinegar
A Greek inspired marinade for chicken used in Gyros and Greek salads. Suggest minimum marination time of 1 hour.
