Chicken Marinade G

Yields roughly two to three cups.

  • 3 Lemons (zest and juice)
  • 4 Garlic cloves, grated
  • ¼ Cup chopped fresh marjoram
  • 3 Tbsp dried oregano
  • ½ Cup olive oil
  • ¼ Cup capers plus caper water
  • 2 Tbsp dry white vermouth
  • 3 Tbsp ground black pepper
  • ½ Cup white wine vinegar

A Greek inspired marinade for chicken used in Gyros and Greek salads.  Suggest minimum marination time of 1 hour.
